Truffle is a hypogeum mushroom (that lives under the soil); that's why is difficult to find unless you are a dog or a wild boar. Truffle lives in symbiosis with the roots of some plants such as oak and hazel tree. With a rounded and irregular shape, it has a variable size, from a dimension of chickpea to an orange and in exceptional cases, even more. It's skin is called "peridio" that can be rough and wrinkled or smooth depending of the truffle species; the interior part is called "gleba" or pulp and it is marbled and in different colors always depending of the truffle species and period of maturation.
The aroma is the main characteristic of this product and it's very strong and pungent in the white species.
